I was home with my Fiancé, William one night and he told me he wanted to make me meatball soup. I told him I wasn’t a big fan of meatballs and I certainly didn’t want meatball soup. He persuaded me to try and once he brought me a bowl of his soup I fell in love with it. I requested it for three weeks straight. Why is Will’s meatball soup so great? Price- When you go to the grocery store you will need carrots (preferably already cut in small pieces), celery, small potatoes (red or yellow), onion, 1 lb or more of ground beef, 1 box of Spanish rice, 1 can of stewed tomato paste, 2 medium boxes of chicken broth or 4 cans, bell peppers, salt, pepper, seasoning salt, garlic salt, and basil. Most of these items you may already have at home. The average price for these supplies is $20.
Presentation- Once you roll the meatballs and cook them in a skillet the secret is to pat them dry of grease so it doesn’t migrate in the soup, making it healthier and more presentable. You bring the broth to a boil adding as much seasoning desired for your taste, the chopped vegetables and tomato paste. Then you cook the Spanish rice like the box directed. Then you add the meatballs to the broth and let cook for about 15 minutes. Once the rice is done, the vegetables are tender and the meatballs are well cooked, you put the rice at the bottom of a plate and gather your soup and spoon it on top. It looks and smells amazing.
Quality- The food is cooked how you prefer it. The vegetables are tender to your liking; the meatballs are cooked to your perfection and the overall meal taste like you have been simmering it in a crock-pot all day. The fresh vegetables and meat make it a great way to stay healthy.
Quantity- With $20 you just made a big pot of food that you can feed up to 8 people. If you have less than that you can save some for lunch the next day. This is a win-win meal.
